Haven't tried any of those myself; today I wanted a little kvass, a (generally non-alcoholic) beverage often fermented from rye, but also from other grains and even, reportedly, birch sap. (Indeed, Pulaski Market sells birch juice, both straight and flavored.) There's no telling from the label just what the people from Sencu used as a starting point; their lightly carbonated version of kvass (1.5 l.; $2.29), from Latvia, has a caramel-like, mildly astringent flavor that brought to mind a strong version of instant iced tea. Bet it would be very thirst-quenching on a hot day.
