Shad Planking Demonstration
Though they're relatives of herring, each spring the shad leave their accustomed salt water and head for their spawning grounds up rivers like the Hudson. "Planking" before a bed of coals is the traditional preparation — shad are oily enough to stand the heat without utterly drying out — but compared with the planked and the smoked samples on offer, I preferred the pickled.
