"Panade" denotes the butter-water-flour mixture used to make choux pastry; at this tiny bakery-café the choux are the foundation of savory, sandwich, and sweet puffs, perhaps a half-dozen each. Mine was layered with vanilla cream and dotted with fresh blueberries ($2).
