The Spotted Pig
Even on sunny afternoons, The Spotted Pig's downstairs dining area is often brimming with pubby enthusiasm; evenings, the vibe bubbles up to the second floor and spills onto the corner outside. A special occasion — such as a visit by guest chef Fergus Henderson, author of two books on the "nose to tail eating" exalted at his two St. John's restaurants, in London — can transform eager diners into an anxious scrum.
Patience is essential, and on a special evening, so is an early arrival; both will be well-rewarded. Shown, top to bottom: a crispy pig's ear with lemon caper dressing (special; $14), from the evening of Fergus Henderson's visit; the specials board; a lemony arugula salad ($7) and the signature, melt-in-your-mouth sheep's ricotta gnudi, with brown butter and sage ($13), both from a earlier, afternoon meal; and Mr. Henderson's roasted bone marrow and parsley salad (special; $18), deep fried tripe (special; $14), and pot roast bacon, trotter, and prune (special; $28).

I was curious about this Fergus Henderson/Spotted Pig event. Now, after seeing that deep fried tripe and pot roast bacon, I wish I had attended. It looks amazing.

I'm so jealous! I tried to go to The Spotted Pig last night unaware of Henderson's guest appearance. I didn't hang out for the 3 hour wait though :(
