Absolute Bagels
The sesame bagel above and the whole wheat bagel below (75 cents each) are fair examples of the Absolute breed: sometimes crunchy, always doughy. They tend toward sweetness, too, though not so much as the bagel pudding (not shown; about $2) that's cobbled together from bits of the milder leftovers and, perhaps, a few spare raisins. (Why no garlic bagel pudding?)
Absolute offers a jumble of café seats; on weekend mornings they're always full, and the line may run out the door, but it moves.
