The pastrami special ($8.50) with tomatoes, onions, and melted swiss on rye, was filling if slapdash; fries were OK.
The name "Bull's Head" is more intriguing. The section of Stamford near the confluence of High Ridge Rd., Long Ridge Rd., and Summer St. has been well-known by that name since at least the late 19th century, but its origins are unclear. One possible connection: A man named Jonathan Dibble (sometimes spelled Jonathon), who was born in Stamford in 1711 and died there in 1760, also held a lease on an establishment on the Bowery, in New York, called the Bull's Head Tavern.
