I'm an admirer, too.
Asked for a softer, not-too-stinky snack, my affable counterman suggested Grayson ($4.50 per quarter-pound), a rich raw-cow's-milk cheese from Meadow Creek Dairy in Virginia. Although it's affectionately named for cheese, this small, well-curated specialty store also stocks many meats, sweets, and other treats that I'd like to take for a walk.
