Amok

Though fish is the traditional foundation of the namesake national dish, amok can be prepared with just about anything you like.

Each of the entries in this amok degustation ($6) — pork, vegetables, shrimp with fish, chicken, and beef — was akin to a cabbagey stew, and not even the seafood entry had anything close to the exquisite mousse-like texture that I remember from years ago. The tablecloth was pretty; my lime slush ($2), too.
