It must be ten years since I had a burger from this Western chain, beloved for its throwback uniforms and genial service. Why not have it their way, I thought: with the default lettuce, tomato, and "spread," a Thousand Islands-like dressing, on a toasted bun. I did ask for fresh onions, but next time I'll hold the spread; the medium rare patty (also my call) was moist enough on its own. The fries, cut in-house and cooked in vegetable oil, were very good, too.

Do you know if it's chain policy to cook-to-order, or did you just get lucky? I'm stockpiling an enormous checklist for my next CA junket, and In & Out just might make my list.
