The first time I took up such an invitation was at Del Posto, where the bread basket was accompanied by the house lardo — a spread of aged, cured pork fat — as well as sweet Lombardy butter. If you take Marlow and Daughters at its word, treat its own housemade whipped lardo ($7.50) with reverence, and caution: Imagine the amount you'd need for your bread, then reduce it by half. (Whipped, check; unctuously, extravagantly rich, also check.) Before you begin, be sure, too, that you have enough bread in the house.
