Once a year, tents line this Briarwood church backyard, and members of the Myanmar Baptist congregation dole out home cooking.
Show up early with an empty stomach, stake out a spot at the shaded communal tables with four or five friends, and you just might be able to taste your way through the entire lineup ($3 to $6 per dish) while chilling to live, folksy tunes in English and Burmese. (Recently, the volume for some performers has been cranked high, making conversation more difficult but affecting the food not a whit.)
A highlight of my first visit was an item loosely translated as "near the river" rice noodles (above) by the church pastor, who made this serving table his first stop. Key ingredients are cilantro; an orange-brown (tuna)fish-based sauce; chopped, bright yellow pickled bamboo; and red pepper. For a look at the finished product paired with a refreshing, clear fish-and-shrimp broth, as well as many more items from multiple fun fairs, see my slideshow.

The making of the papaya salad was so much fun to watch. The lady used a pestle and mortar to grind all the ingredients together. Yum!
