C. Montgomery Burns, who appeared on nearby posters advocating "no third terms," would surely approach his burger with knife and fork, but for most of us, "The Bobcat" ($6.50) is better tackled with two hands. It's a riff on the standard Bill's Burger, hand-shaped and firmly pressed on the griddle, which not only yields a modestly irregular patty but also renders moot an order of medium rare. (Mine was plenty juicy nonetheless.)
Bill's prepares a half-dozen different burgers; a toasted sesame-seeded bun, and an accompaniment of lettuce, tomato, and pickles, are also standard. But since I've long had a little thing for pepper jack cheese, The Bobcat's deconstructed topping of green chiles and jack was an easy call. Or, as Mr. Burns might say, ex-cellent.
