For an additional dollar, a small order of the Cantonese noodles called cheung fun ($1.50) can be fleshed out with any of some half-dozen additions, including the well-stewed tripe shown above. If that's off-putting, the snugly wrapped rice-noodle rolls, accentuated with tiny shrimp, are a treat all by themselves.
