Indeed, these days many cost more, but for your money you should expect primo ingredients (as at An Choi) or inventive, well-considered combos (as at Baoguette). This street cart's Vietnamese sandwiches are all the one price, and I had my eye on roasted eel; it's available every day, I was told, but on this occasion had sold out shortly after noon. My backup, the traditional banh mi featuring sliced pork ($6), also carried cucumber, carrot, cilantro, jalapeƱo, and lots of mayo-like dressing. But for something so basic, you should expect a much fatter payload — or a much leaner price, as at Ba Xuyen.

Mind blowing that a banh mi is $6.
In Orlando (with a sizable Viet population) they generally go for $2-$3, but mostly just the standard and a char siu variety.
