By this time, though, I'd already sampled a sliver of the Berkshire Blue (4 oz., at $32 per pound) — a raw cow's milk cheese out of Massachusetts that's as creamy and sweet as a blue cheese can be — and I was not to be downsold.
It does taste great in a burger, I determined later that day, even on an aged-beef patty, though to no surprise the earthier parts of its profile stood in highest relief. I nipped off a piece of the Berkshire Blue to keep me company — alone, it was its creamy, sweet self once again — while I prepared a second burger to confirm my results.
