Your typical kibbeh is a deep-fried torpedo with a casing of bulgur and a payload of minced beef or lamb. (I don't have a photo; as a substitute perhaps you'll accept the Dominican cousin called a quipe.) The commonest variant is the filling; this vegetarian kibbeh ($1.25) turns to spinach, onion, and chick peas. But this Egyptian-owned shop also modifies the shell with the addition of pureed pumpkin, which tempers the nutty flavor of the bulgur and, at least in my mind, adds a slight golden glow.

This reminds me of a Japanese croquette too. Since this is an Egyptian owned shop, they could venture out to using fava beans as well.
