Not shown precisely as served: In this gratin de banane jaune ($5), sweet plantains in a cream sauce with Emmental, I've flipped one disc to show you what lies beneath the bubbly surface. The back-and-forth between sweet fruit and salty cheese I leave to your imagination. Must-try for another time: pheasant pâté en croûte. Or, perhaps, the avocado-laden Guadeloupe-style cheeseburger, with an egg for full measure.
