Though reportedly it can be found in Kansas City and in Texas, too, barbecued mutton's strongest ties are to western Kentucky. Out of Owensboro, near the Indiana border, the Moonlite Bar-B-Q Inn serves a chopped-mutton sandwich that's full of flavor but not gamey in the least. (Credit 14 hours' cooking over hickory.) Here it's accompanied by the thick soup called burgoo, which at Moonlite calls for chicken and vegetables, And, yes, mutton, too.
