Air is water.

But, as you can see, durian belanda isn't a bland cultivar of the "king of fruits" — it's Malay for the much more amenable soursop. Air durian belanda ("soursop water," rm 1). Also shown: grilled otak-otak (five for rm 2), a spiced, leaf-wrapped fish cake; springy roti jala ("bread net," five for rm 2), with which I gathered up an accompanying ration of chicken curry; pulut serunding (rm 1), glutinous rice under a blizzard of coconut floss, more spicy-sour than sweet; the crowded street as night fell.
