Maultaschen, filled pasta from the southern German region of Swabia, resemble oversized ravioli, at least at first.
Often they're dressed with butter or swimming in broth. But above, in more customary biergarten style, a single maultasche has been sliced and fried, and paired with potato salad ($7). More beer food: soft, seasoned aged cheese called obazda (below, $7) and a pretzel to spread it on. The flavor of this Bavarian specialty can be sharp; radishes freshen the palate.
