"Crema" is the name that street vendors have cited, on more than one occasion, for this airy sweet that (somewhat disconcertingly) is held and served at the ambient temperature. Jeff Orlick has recorded the alternative name "espumilla," which connotes merinque and evokes the texture, too, though this dessert is not baked and lacks a crisp exterior. A little gelatin may help it hold form.
