Cantler's brings in Maryland blue crabs continuously. From the parking lot, which serves as an ad hoc beer garden and waiting area, we had ample time to watch freshly delivered crabs being culled and, occasionally, making a break for it.
Crabs are sorted not only by size but also by their readiness to shed their rigid exoskeleton. These "peelers" and "busters" are confined to sloughing tanks until they complete the process; from there it's to the market, or to the kitchen.
