Stuffed derma, a.k.a. kishka, suggests Thanksgiving stuffing in sausage form. But it's softer, richer, and — in this instance, perhaps owing to the use of rendered chicken fat, or schmaltz — stickier, too. Thick brown gravy came with, for spooning on top.
