It seems that squillas or stomatopods, as they're also known, are now in season; lately I've made multiple sightings at various Sunset Park markets. Many species of these crustaceans make their way onto Southern Chinese menus. I had a painful time extracting the meat from poached squillas in Hong Kong; perhaps the variety that's salted, peppered, and served in Manhattan will be less of a threat to the fingers.
