I am almost sure fresh eggplant is involved. That is actually a complicated dish to make at home, so I always order it at a restaurant. The eggplant is roasted (the complicated part), then peeled, then mashed. The stem is your "handle" so you have to leave it on. Eggplant then dipped in egg and fried. Try the meatless version next time, I prefer it. And the best sauce is catsup, and must eat with rice, of course
