"Sheep belly" was the counterman's prettied-up description of pachounie ($9.95), but "sheep offal" is the delectable truth. This Guyanese specialty might include intestines, liver, heart, and stomach, depending on what innards are on hand; pachounie requires a lot of cleaning time, the counterman added, so many places don't offer it. Not everyone prepares their own roti, either, but the flatbread below was griddled, folded, and thwacked into submission before my eyes.
My pachounie wasn't as rich as you might think, and not spicy in the least — simply belly-filling.
