Psar Orussey, or O Russei (don't confuse it with Psar Tuol Tom Pong, commonly called the Russian Market) isn't only for greens, however. I encountered shimmering golden dried fish, glistening grayish-blue prawns, ruddy skeins of sausage, rust-colored heaps of dried shrimp, and a pink pile of shaved pig's ears. (Some folks singe off the bristles; here they're removed with a razor.) From a limited selection of ready-to-eat offerings, on my departure I snagged some sort of pate and noodle-like snack, but I kept my head on a swivel for the scooters as I weaved through the traffic outside.
