This shop on a Hanoi side street specializes in two soups featuring vermicelli noodles, or bun: bun rieu, which is flavored by crab paste, and bun oc (Boon Oak, shown here), starring snails. Not atypical for the North of Vietnam, the featured ingredients are buried under tomatoes, scallions, and fried bean curd, but you can glimpse the gray mollusks at the center of the sidewalk display.
