Perhaps they're dancing on account of the alcohol: not just a keg of Abita, but also an algae-green concoction called swamp water.
I'm not sure what it was colored with, and I don't recall what was in it, only that it was too sweet. Beer, I quickly determined, was a better pairing for boiled shrimp, jambalaya (with or without gator; not shown), boiled crawfish, and roast pig. If you've had crawfish, you know they're a lot of muss for precious little meat (just the tail, and the claws if they're big) plus the opportunity to suck the juices out of the head. But at this open-air, all-you-can-eat affair — the centerpiece of the Lousiana Roadfood Festival — the outdoor kettles kept going all evening long, till everyone had his fill. Even the wild alligators that nosed out of the water, now and again, got a little something just for showing their faces. That might be reason enough to dance, too.
