(No longer in business.) Tamales from this Guatemalan vendor are casual about mixing meat and masa, the corn-based dough that usually surrounds the filling rather than cuddles with it. Carrillo's masa is so super-fluffy, however, that a little mess hardly matters. Also shown: atol de elote, a thick corn-flavored beverage also based on masa; chicken-filled flautas, or rolled deep-fried tacos; and a fried, sugar-sprinkled plantain rellenito, or "little stuffed thing" — stuffed, in this instance, with milk custard. At bottom are photos of the Carrillo stand, as it appeared in 2007, and the diminutive cart from which this vendor later did business.
