The fins are spoken for, I reckon...
...it's the meatier, less pricey parts of the shark that are minced into the fried tianbula, or Taiwanese fish cake ($8). Fine at first bite, but would become monotonous without the mix-ins: sour greens and salty "special pork sauce." A combo plate that added chicken or pork — the NYC Cravings truck fries 'em both — would be even better.
