"Calabaza," the only name on the hand-lettered label at this nicely stocked produce market, frequently serves as a catch-all for pumpkins and squashes in many shapes and sizes. This flattish, deep-ribbed heirloom variety of Curcubita moschata is more particularly known as the musquee de Provence or, if that's too fancy for your ears, the fairytale pumpkin. (Thanks for the I.D., Leeanna!). When sliced open (wedge, $2.65, at 99 cents per pound) and seen in full sunlight, the flesh is a striking orange; it's dense and sweet, and good for baking. An uncut, sienna-colored specimen, in a size commonly likened to a wheel of cheese, might also anchor a grand centerpiece, if you've got the keys to the station wagon.
