And of course the roe pouch of the tenggiri, also known as the narrow-barred Spanish mackerel, is free of bones altogether. (Here, several of the oblong pouches appear toward the top of the photo.) On a tapas menu, roe from the tenggiri's Atlantic cousin might be gently cooked, then spread on toast. At Raju's, where each place setting is marked by a banana leaf and a serving of rice, and cutlery is generally offered only on request, the preparation is more rough-and-ready: The roe (chopped into smaller pieces), the fish fillets, and some sliced squid all found their way into the deep fryer. At an outdoor table, as the evening air had begun to cool, that seemed just right.
