Lim Kee uses only the diminutive cultivar known as raja or radja (S$1.20), a native of India now widely domesticated. There's a hint of lime in the crisp batter, added to freshen the fry oil (so saith the Makansutra). The same treatment is accorded cempedak fritters, too (S$1).
As for "Orchard": When urban redevelopment moved Singapore food vendors off the streets and into hawker centers, many proprietors branded themselves with the name of their better-known, outdoor location. Here the reference is to Orchard Road, now an upscale shopping district, even though the stall itself was on Somerset, one road to the south.
