Hominy is a staple in Cape Verde, a former Portuguese colony off the coast of Senegal, and a key ingredient in cachupa, a stew prepared just a little differently (word has it) on each of the republic's ten islands. At this Cape Verdean-Portuguese-Spanish cafe, slow-cooked cachupa isn't on the everyday menu, but hominy still pops up as a side dish. Here it accompanies fried cod with peppers and onions (small, $4).
