Tabriz, Iran, was the proprietor's first home; Tehran, where he worked in the family bakery, his second. Since 1991 Watertown, Massachusetts, has been the beneficiary of his family's generations-old recipes. These noklod chi, or chickpea flour cookies (nokodi, for short, $9.99 per pound) were fragrant with cardamom, vanilla, and saffron, dense, rich, and meltingly evanescent.
