"There's chicken in that. OK?" At the service of a customer who asked for small orders of okra and chickpeas, the young fellow manning this cart didn't want to cross up a possible vegetarian. (No worries on that score, I assured him.) Indeed, a sizable helping of street meat accompanied firm pods of okra; the chickpeas, layered on rice, were bolstered by potatoes and crunchy cabbage. Both dishes had a hot-pepper edge.
