(This venue is closed; Torst, the beer bar that hosted it, remains open.) In the company of chicken confit, spicy cabbage, salt-and-pepper cucumbers, and farmhouse cheese, the taste of of burnt hay was difficult to detect. But in daylight it was impossible to miss the gray spread, flavored by the hay — a match for the color of duct tape that held down heavy-duty extension cords at the Hester Street Fair.
This rare outdoor appearance may have been a test case for the sandwich (half, $7). A similar item now occupies the bar menu at Torst, where Luksus also serves a tasting menu in the back room, by the kitchen. The earthy palette of colors and flavors that seemed out of place at a summertime market would blend in very well, I'd bet, where you could come in from the cold and lean on your elbows on a communal table, sandwich in one hand, beer in the other.
