A freshly pounded green papaya salad, one table over, would have been a healthier choice, but I couldn't resist the sizzle. I did, ultimately, resist the split grilled duck heads, which often are too much effort without a compensatory beer. (In Flushing, other styles of duck head are sometimes available at Tianjin Dumpling House, on the lower level of the Golden Mall, and at Prince Noodle House.)
Instead I ordered two dollar skewers: chicken gizzards (at middle left of the first photo) and eggs. The vendor explained that these were prepared by emptying the contents, cooking them, and pouring them back into the shells. The grilling, in the case of the eggs, is simply rewarming. A Laotian version I encountered in Oakland employed salt, pepper, and something speckled and green, which was included, in smaller amounts, in these Cambodian eggs, too. I'm still not sure what it is.
