According to the 10Below website, "this concept was created on the streets of Thailand," also the home of ice cream sandwiches the likes of which are rarely seen. Working quickly on a cold plate in a flurry of chopping, folding, spreading, and scraping, in only a few minutes the counterman transformed cream, strawberries, graham crackers, and condensed milk into my Strawberry Shawty (with toppings, about $7). The finished bowlful, one of eight combinations, was not overly sweet; the ice cream itself had an almost chewy character. For photos of the process, see the EIT page on Facebook.
