(This venue is closed.) The geoduck is best-known for a comically long siphon — its Chinese name incorporates the character for elephant, a reference to the trunk — but the belly is ample, too. An order of geoduck two ways (sold by weight; $90) yields not only a platter of thin-sliced neck meat (over ice) but also a chaser of salt-and-pepper-fried clam belly. That's belly, singular.
