The confectioner comes from Guyana, but her mom lived for a time in Jamaica, hence a roster of ice cream varieties that includes Guinness, Grape-Nut, and this Irish moss ($5). The namesake seaweed, when harvested and boiled, yields a jellylike substance that thickens a number of island beverages and may also contribute to the denseness of the ice cream. The blandness of the Irish moss itself was livened up with Caribbean spices — clove and cinnamon are typical — in judicious measure.
