Bowls of Sichuan-style fish are so commonly bristling with chile peppers that the mild-mannered countenance of our Chengdu fish filet with pickled vegetables ($18.95) gave us pause. Tender flounder, sour greens, limpid noodles — and, lurking below, a hit squad of minced chiles — set us aright.
