"Mexican goat-milk-caramel thick shake" doesn't roll off the tongue. Try, instead, "esquimo de cajeta" (ess-Key-moh day cah-Hay-tah, 25 pesos, about $1.25 at the time). Discounting the sprinkled cinnamon, its true color was a creamy tan, not the rosy hue also evident, in my photo, on the metal grating. I bought my esquimo inside a tianguis, a temporary open-air market — Mexico City offers more than 1,000 — whose vendors raise canopies to protect against sun and rain. Though these canopies can be any color, a pinkish red prevails both above and below.
