For huevos Motuleños — a breakfast dish named for the town of Motul on the Yucatán Peninsula — soft-cooked eggs are deposited atop black-bean-covered tortillas, then cloaked in a spicy tomato-based sauce strewn with fresh cheese. This rendition added embellishments of ham, peas, and sweet plantains. Also on hand: fruit, pastries, and (not shown) juice and coffee.
