Cooks from four West African countries — Senegal, Guinea, Burkina Faso, and Mali — provisioned the steam table and, ultimately, my rice-and-four. Judicious ladling (read: not much meat) held the cost to a modest four bucks. The best sauce was the one that looked as if it might contain peanut butter, and probably did.
