(This venue is closed.) Tan-tan men are Japan's soupier and less spicy counterpart to Sichuan's dandanmian. Both noodle dishes are typicaly dressed with minced pork, scallion, and baby bok choy or the like; this tan-ten men adds takana-zuke (mustard-green pickles) and bathes the noodles in a sesame-flavored chicken stock. Sapporo, which opened in 1975, claimed to be New York's oldest ramen-ya; the restaurant closed its doors early in 2018.
