This sign, actually from a competing food stall on the main street of Tepoztlán, spells out one goal of big-city day-trippers as understood by small-town merchants: "típico" food that is "100% Tepozteco." To wit, the itacate (sometimes, jitacate, Ee-tah-CAH-tay), essentially a gordita that's been given a distinctive triangular shape. Mine sported several edible blossoms of the flor de colorín (literally "flower of color," also known as the flame coral tree), a member of the pea family.
