One of many types of tlaltequiada (or -queada), a fritter dating to pre-Hispanic and perhaps pre-Aztec times, at this outdoor-market stall. Tlaltequiadas de jamaica (tlal-tay-key-Ah-dahs day hah-My-kah) are fashioned from dried hibiscus flowers; below, one has been coated in a mole sauce made from amaranth. Also shown: a view of the town from Sierra de Tepoztlán; a coati, one of a band that shills for the snack vendor at the summit. The coatis answer to the sound of any crinkling plastic wrapper, but they prefer peanuts.
