It betrays little of its makings — among them, warm beef slow-braised in pomegranate juice, and a bespoke vegetable combo that includes pickled fennel, carrot, red cabbage, and currants — but fanciful culinary formulas, which decorate the dining area, hint at the underlying alchemy.
